Katherine Heigl, the well-known actress from ”Grey's Anatomy” and “27 Dresses” cooked Tomato Soup with Herbed Goat Cheese Spread at Martha Stewart Show. Before presenting you the recipes, let’s talk about the final season of ”Grey's Anatomy”. Katherine Heigl's character – Izzie - has spent most of the time battling cancer. She had to decide if she should have a brain surgery. Moving to other characters we find Meredith and Derek getting married. Bottom of line, the final season of ”Grey's Anatomy” may be frenzy and sad. Now let’s see how we cook Tomato Soup with Herbed Goat Cheese Spread. Tomato Soup – 6 cups Ingredients: 2 medium yellow chopped onions 6 tablespoons unsalted butter 24 ounces canned whole plum tomatoes 2 cloves garlic, chopped 3 cups chicken stock 1/4 teaspoon black pepper, ground Instructions Melt the butter in a large saucepan. Add garlic and onion; cook, stirring, until onions gets softened - about 15 minutes. Add chicken stock, tomatoes, pepper, and salt; bring to a boil. Reduce the heat to low and cook until onions, tomatoes, and garlic have softened – about 10 to 20 minutes. Working in batches, transfer soup into the jar of a blender and purée until smooth. Return to saucepan to place it over medium heat. Cook till soup is heated through. In case the soup seems too thick, stir it in extra stock to thin. It’s recommended to serve the soup immediately. Herbed Goat Cheese Spread - 1/2 cup Ingredients: 2 tablespoons heavy cream 5 ounces goat cheese 1 teaspoon chopped thyme 1 tablespoon chopped flat-leaf parsley Salt Black pepper, ground Instructions Place the ingredients in the bowl of a food processor and then process until well combined. You can serve it on bread along with the soup. ©2009 Project Weight Loss. All rights reserved.
