May 21, 2009 If we think about his surname, Rod Stewart has Scottish roots. Right now the rumor is Rod and his wife Penny Lancaster are trying to conceive a second child. Maybe they should relax in a romantic dinner atmosphere, enjoying Rod’s favorite Scottish dish and then let each other carried away.
What is this dish I’m talking about? Rod Stewart likes stovies. There are many variations for stovies, but I’ll present you a basic recipe for four people.
Ingredients
- 1½ lb potatoes, peeled and sliced
- 1 big, very thinly sliced onion
- 1 tablespoon with dripping (from bacon or meat)
- Pepper or all-spice for seasoning
- Chopped parsley or chives
Instructions
Melt the dripping in a large pan. Next add a layer of potatoes, then on of onion, followed by one of meat. Cover them with water or stock. Repeat putting layers with the remaining potatoes, onion and meat. Also add salt, pepper or all-spice.
Cover the pan and cook the stovies over a low to moderate heat, while shaking the pan occasionally. It should take about 30 minutes. When it’s done the potatoes will be tender and the liquid will be absorbed.
Stovies is served with a sprinkling of chopped parsley (or chives).
