Barbara Boxer's Muffins

Senator Barbara Boxer is the U.S. Senator of California.  Right now she and other Senate colleagues are trying to make the White House send "high-level envoys" to free two American journalists from North Korea.  This is not an easy problem to be solved since they haven’t received an answer from the White House yet.

 

Senator Boxer is well known for her fight for human rights and for her honors received in Congress, which I’ll mention a few of: Consumer Federation of America, League of Conservation Voters, Planned Parenthood, Public Citizen and so on.  As for the human rights, she has been recognized as a champion by: The Anti-Defamation League, The Leadership Conference on Civil Rights, The Human Rights Campaign, and The Family Violence Law Centre.  What just a few of you know, she’s a great cook too. She has created recipes for some of her favorite foods, e.g. lemon blueberry muffins.

 

Bellow is the recipe of Senator Barbara Boxer’s lemon blueberry muffins – 12 muffins:

 

Ingredients

  • 2/3 cup of sugar
  • 2 cups of flour
  • 1/4 cup of butter or margarine, melted
  • 2 cups of blueberries, fresh or frozen
  • 1 cup of lemon yogurt
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 to 2 teaspoons of grated lemon peel
  • 1 teaspoon of vanilla
  • 1 teaspoon of baking soda
  • 1 egg, lightly beaten

 

Instructions

Start with the oven – preheat it to 400 degrees.  Then take a large bowl and combine dry ingredients.  When you’re done, stir in blueberries.  Take another bowl in which you’ll blend the lemon peel and wet ingredients.

 

Combine the two bowls and stir, but don’t overmix.  After you fill greased muffin cups, bake them for 20 - 25 minutes.  At first cool the cups on rack for 5 minutes and then remove from pan, but let them continue cooling on rack.
