Diet doesn’t mean deprivation anymore. Deprivation diets don’t work for everybody. Some low-calorie goodies are better than nothing at all.
Here is a low-calorie recipe for Chicken Brunch Bake, from Taste of Home Recipes:
Eight servings; preparation time: 10 minutes; bake: 1 hour.
Ingredients
- Egg substitute equivalent to four eggs;
- 9 slices of day-old reduced-calorie bread, cubed;
- 1-1/2 teaspoons of salt, optional;
- 2 tablespoons of minced fresh parsley;
- 4 cups of cubed cooked chicken;
- 3 cups of reduced-sodium chicken broth;
- 1/2 cup of diced pimientos;
- 1/2 cup of uncooked instant rice.
Instructions
Toss broth and bread cubes in a large bowl. Add rice, chicken, parsley, pimientos, and salt, if desired. Mix them well, then transfer to a greased 13 by 9 inches baking dish. Pour egg substitute over all.
Let it uncovered and bake at 325 degrees until a knife introduced near the center comes out clean; it should take about an hour.
Nutritional information for one serving: 44mg cholesterol, 179 calories, 4g fat, 242mg sodium, 0 fiber, 17g carbohydrate, 19g protein.
