A Tasty, Low Fat, Spring-Time Recipe – Asparagus Frittata

Spring is here so new recipes are needed. One of the best dishes you can cook during this season is Asparagus Frittata can be served with a low fat muffin or fresh fruits. For this recipe you can use egg substitute or combine whole eggs with egg whites, according to Fiona Haynes, About.com Guide. Cook time: 11 minutes; servings: 4. Ingredients 1/4 cup of reduced fat shredded cheese 1/4 cup of nonfat milk 1 cup of egg substitute or 2 whole eggs and 4 egg whites 1/2 pound of asparagus spears Instructions Steam or boil the asparagus spears for about 3 minutes. Next, plunge them in cold water and drain. Then, cut each one into pieces and set it aside. Combine eggs with milk. Preheat broiler. Coat a medium nonstick skillet with cooking spray and let it warm up over medium heat. Add asparagus and eggs. Cook frittata gently and undisturbed until edges begin to set; it should take about 5 minutes. Sprinkle cheese on top. Be careful when you transfer the skillet to broiler. Cook frittata under the broiler until eggs are set and have a golden color, meaning for about 3 minutes. Before you serve it, cut the frittata into 4 wedges.
