A Healthy Recipe for GI Dieters

You decide to follow a diet, you’re excited, but what happens when your creativity gets lost after a while and you don’t know what to cook anymore? Here is a recipe for those who are on the GI diet. Lemon and Parsley Chicken is a healthy meal any time. Following instructions from the GI Diet Guide, you can make three servings. Ingredients Instructions After you remove the peel from the lemon, dice the flesh into small pieces. Next chop the parsley, finely slice the garlic, and mix them in a bowl along with the lemon, pepper, and salt. Carefully slice the chicken breasts length ways so you would create a small pocket. Be careful when you do it because the pocket will be sealed up after the lemon has been put inside. Once you have stuffed the breasts with lemon mixture, seal the pocket with the cocktail sticks. Put the breasts in an oven dish, cover with foil, and let it cook for about 30 minutes, after which remove the foil and cook for another 5 minutes. You can serve the lemon and parsley chicken with a crisp salad. One serving of this meal has 185 calories, 29g protein, 1g fat, 2g carbs, and 472mg sodium. ©2010 Project Weight Loss.
