New Mexico Game and Fish: After You Catch It, how Will You Cook It?

The New Mexico Fishing and Game Department warned the anglers and fishermen about weather changes. The department also released the stocking and fishing report. For those who will actually catch something, here is a great recipe. Gemelli Smoked Salmon is a tasty recipe, so here are the ingredients and instructions from CookingRecipe.org. Ingredients 1/4 cup of sliced scallion greens 1/4 cup of tomato concasse 1/4 teaspoon of freshly ground black pepper 1/2 cup of finely chopped yellow onion 1/2 cup of vodka 1/2 teaspoon of salt 1 cup of fish stock 2 cups of whipping cream 2 tablespoons of unsalted butter 2 tablespoons of chiffonade fresh basil 2 tablespoons of chopped fresh parsley 1 tablespoon of very finely grated Parmesan 2 teaspoons of minced garlic 8 ounces of gemelli 1/2 pound of smoked salmon, sliced thinly and chopped Instructions Melt the butter in a large skillet, over medium-high heat. Next add the onions and cook while stirring for about 3 minutes, until soft. Add the tomato concasse, garlic, and scallion greens, and cook, stirring, for 30 seconds. Then, take the pan from the heat source and pour some vodka into it. Return to the heat and flame. Add the fish stock after the flame dies out. Bring to a boil and reduce by almost 50 percent in volume. Add the pepper, salt, cream, and let it boil until its volume reduced by half. Meanwhile, cook the gemelli until al dente, in a pot of boiling water, salted. Drain in a colander. Add the gemelli to the cream sauce. Toss to coat. Add the salmon, herbs, and cheese, and remove from the heat. Then, toss to coat and serve immediately.
